CHICKEN STEW

INGREDIENTS

3     skinless chicken breasts

3     tbsp olive oil

2     medium onion, halved and sliced

1     carrot, bay leave and cinnamon stick

1     tsp of coriander and ginger

1     red and yellow pepper cut into squares

1/4  cup dry white wine
1    14-oz can tomatoes, drained
1     cup light vegetable stock
1    19-oz can chickpeas, rinsed and drained, or
1     cup dried chickpeas, cooked
8     large green olives

2     tbsp lemon juice

COOKING INSTRUCTION

Cut chicken breasts into 2-inch strips and season with salt and pepper. Heat 2 tbsp of oil in a non-stick frying pan over medium-high heat and sauté chicken in batches for 1 to 2 minutes until chicken is slightly brown. Remove chicken from pan and set aside.

Heat remaining 1 tbsp oil over medium heat and sauté onion, garlic, carrots, bay leaf and all the spices for 12 minutes or until vegetables begin to soften. Add peppers, fennel and wine and cook until pan is nearly dry, about 4 minutes.

Stir in tomatoes and stock and bring to a boil. Reduce heat and simmer mixture, covered, for 10 minutes. Add reserved chicken to pan and continue to simmer, covered, for another 15 minutes, or until stew has thickened. Stir in olives, lemon juice, zest and parsley and serve stew over rice.
