POTATO SALAD

INGREDIENTS

11/2

lb potatoes

1 tbsp salt
2 tbsp chopped parsley
1/2 lb bacon chopped
1 large onion
2 tbsp vinegar
1 cup white wine

 

INSTRUCTION

Boil the potatoes in salted water for about 30 minutes. In a frying pan, sauté the bacon over medium heat for about 2-3 minutes. Remove bacon from pan, drain on paper towels. In the same pan, sauté the chopped onions for 2 minutes. Add the wine and vinegar and simmer for 2 minutes. Season with salt and pepper. Peel and cut the boiled potatoes to make 1/2 inch slices, then transfer to a salad bowl. Add the chopped parsley and bacon. Add the sauce and mix carefully, make sure that the potatoes do not crumble.
